Do you love chocolate? Stupid question! Everybody loves chocolate! We have a Japanese niece that lives in Las Vegas and works as a chocolatier at one of the big hotels. She was coming in to visit with her daughter, so I thought I’d brush up on my chocolate skills and make a few truffles to surprise her. I really like the Norman Love chocolates and found to my surprise that they do chocolate classes on making truffles. Now I’ve made truffles before, but don’t do it very often so I had to brush up on my skills.

The Norman Love class was good fun and the group of people we were with were a lot of fun too. Its a good class to get an introduction to making chocolate truffles and the results are yummy, but you won’t be able to make them in your home after this class. That’s because the chocolate was pre melted and held in their very expensive machines. So if you’re standing in your kitchen with a bag of chocolate morsels and a double boiler, good luck! But again, the class is fun for a group outing.

So those were the truffles we made. Delicious! The teachers were very nice and all smiles. They are serious about the food sanitation part, so pay attention when you’re there.

After we were done we got a tour of the facility. The top picture on the left is the three vats of melted chocolate that we used to make our truffles. So that’s the big complicated part of melting the chocolate and then tempering it. So the stress levels are low. When you’re doing it in the kitchen by yourself with your own pots and pans, things could get stressful. But the chocolate still tastes good even if it comes out a little wonky.
