What so special about this breakfast sandwich? Everybody can make a breakfast sandwich or go out and buy one at your favorite fast food place! Maybe I’m enjoying these home made breakfast sandwiches because of my recent medical complications having to do with my gallbladder being removed and I’m enjoying them as a kind of comfort food after eating bowls of soup for three weeks. Who knows! All I can tell you is when I bite into these I close my eyes and savor the flavor! It helps that the egg yolk is ooewy gooey!

This particular breakfast sandwich is made with a tiny waffle made of just grated cheddar cheese and an egg. So this sandwich is grain free, gluten free, so its low carb, high fat and medium protein. Now a lot of times I’m not so energetic to make the waffle, so I have used a slice of White Mountain bread from Publix. Its a delicious bread. I highly recommend it if you’re not opposed to eating bread and carbs. Check out the following slideshow!
