What happened to Week 3 you might ask. I didn’t shop specifically for Week 3 because I had a lot of leftovers from late in week 2, we also went out some, had people over for the fourth and they brought food, so there was kind of an over abundance of food. So for Week 4 I didn’t shop at Winn Dixie! Instead we went to Costco and bought $48 worth of food that should be good for the week! Usually when we go to Costco we spend hundreds of dollars, but that’s usually good for a couple months. This is the lowest amount I’ve ever spent in Costco!

So what did I get for the week? Besides squash and asparagus for vegetables and a salad pack, for proteins I got hamburger and a rotisserie chicken. I still have a bag of frozen shrimp in the freezer I bought in week one, so if I have to augment this weeks purchase with more protein, I’ll use that. But I think I’ll be good. Our first meal was the rotisserie chicken of course, just that, no veggies. I took all the meat off the bones and used the bones to make a stock. For dinner I made meatballs and we had zoodles and meatballs. I used a jar of red sauce from the pantry that’s been in there for a couple of months. So lots of leftovers there, as with the chicken. So plenty meals ahead with those! For example, my wife had a meatball sandwich for breakfast the next day. Saturday we went to a wine tasting at Buckingham Farms and we split a Chef’s Salad while we were there. $15. We also had a salad for dinner that night from Costco. Sunday was bacon and eggs from a previous Costco run. For Dinner we’re going to have burgers made with the Costco hamburger meat and I’m using buns from the first week’s purchases at Winn Dixie. The third pound of hamburger meat will be used to make meatloaf!

What’s in store for the rest of the week? Meatloaf. Creamed Chicken. Chicken with Pasta and Mushrooms. The mushrooms we’ll get from Publix, so that’s an additional expense. And more Zoodles and Meatballs!
